The Pork Industry has announced a new internal temperature requirement when cooking pork.  Remove pork from the oven at 145 degrees and let it rest for 3 minutes.  This will allow the meat fibers to close and the juices to stay inside.  This temperature change is a wonderful change for all of you pork lovers out there.  Also, as a reminder, when cooking with glass pans, decrease the oven temperature by 25 degrees as glass cooks quicker.  Have a great time with this new temperature regulation and have a Porktastic Day.Until next time
